Nonino

A Friulian grappa distillery whose own catalogue carries the line since 1897. Pomace is selected and destalked, distilled in copper steam stills in a batch process with the heads and tails cut off, and aged in the family's own cellars. Its da Prosecco Riserva is Glera pomace, twenty four months in barriques and small casks, comfortably past the eighteen months a riserva requires. The producer never names the wood its barriques are made of, which is why the cask cell is empty.
