Poli

A grappa distillery founded in 1898 at Schiavon in the province of Vicenza, run by a Veneto family the producer traces back to 1400. Its pages name two kinds of still, an old steam alembic and bain-marie stills of its own design, without saying which bottle comes off which. Sarpa is the local word for grape marc, and Sarpa di Poli is a young grappa from Merlot and Cabernet marc with no mention of ageing anywhere on its page.
