Sánchez Romate
Spain > Jerez · Founded 1781 · 1 drink
The bodega behind Cardenal Mendoza, in Jerez de la Frontera. Its brandy is distilled from Airén wine, rests three years before entering the system, and then ages dynamically through eight scales — seven criaderas and a solera, around 400 American-oak barrels each, previously seasoned with Oloroso and Pedro Ximénez. The producer's own pages give 1877 for the family's first brandy and 1887 for the brand; 1781 is the bodega's founding year and comes from the Consejo Regulador, not from the producer.
