The appellation with the narrowest rules of any brandy here: a handful of permitted white grapes led by Ugni Blanc, double distillation in a direct-flame copper alambic charentais, off the still at no more than 73.7%, at least two years in oak and 40% in the bottle. What the same rules also permit is worth knowing — caramel for colour, sweetening, and an infusion of oak chips — bounded only by a cap of 4% vol on how much all of it may obscure the strength.
