Made from pomace — the skins, pips and stalks left after pressing — and not from wine, which is also why EU law does not call it a brandy but a grape marc spirit. No ageing is required and most of it is bottled clear within months. The words that do mean time in wood are vecchia or invecchiata, at least twelve months, and riserva or stravecchia, at least eighteen.
