The one category on this site that two countries define incompatibly, and neither recognises the other. Peru permits eight grapes, a single distillation straight to bottling strength, nothing added afterwards — not water, not colour — no wood at all, and 38% at the lowest. Chile permits thirteen grapes, allows both water and oak, and bottles from 30%. On a pisco the country is not a detail, it is which rulebook applies.
